Today I’m bringing you my 4 favorite Quick Vegan Dinner Recipes with Amy’s. They all require minimal effort and come together in minutes!
Holiday time can get very hectic but your weeknight dinners don’t have to be! Whether it’s running from store to store getting groceries and gifts or visiting the close ones, last thing we need is to think what’s for dinner! With Amy’s meals you don’t have to worry about it! Keep the dinner simple, spend less time cooking by serving family easy, stress-free meals when preparing for the big feast.

I chose four Amy’s meals and paired them with sides for delicious, easy and quick vegan dinner recipes!
QUICK VEGAN DINNER RECIPES
1. AMY’S ROASTED VEGETABLE NO CHEESE PIZZA
Combination of caramelized onions, organic shiitake mushrooms, roasted red peppers and marinated artichoke hearts. Drizzled with balsamic vinegar. Dairy free, soy free and vegan. It’s so delicious and I promise, you won’t miss the cheese! Serve it with a side of green salad.
2. AMY’S RICE MAC & CHEEZE
Organic rice pasta with creamy “cheese” sauce. Gluten-free, dairy-free and vegan. Best vegan mac and cheese you will ever have!!! Insanely creamy, gooey and filling. It goes perfectly with roasted broccoli.
MAC AND CHEESE WITH BROCCOLI
Preheat oven to 425F. Place the broccoli florets into a mixing bowl. Drizzle with extra virgin olive oil. sea salt and black pepper. Spread on a baking sheet and roast for 8 to 10 minutes. Toss with the macaroni.
3. AMY’S ORGANIC CALIFORNIA VEGGIE BURGER
Made with organic bulgur wheat, mushrooms, vegetables and walnuts. Made dairy-free and vegan. The veggie patties are so flavorful and tasty. Serve them on a whole grain bun with lettuce, tomato, onion and avocado. If you have a bit more time, make the sweet potato fries. Veggie burger and sweet potato fries make the best combo!
VEGGIE BURGER AND SWEET POTATO FRIES
Preheat oven to 425F. Combine sweet potato strips, extra virgin olive oil and sea salt. Spread potatoes on a parchment paper lined baking sheet. Bake for 30-25 minutes, flipping potatoes halfway through.
4. AMY’S BUTTERNUT SQUASH SOUP
Last but not least. Organic butternut squash blended with a hint of garlic, spice and finished off with extra virgin olive oil. Dairy-free, vegan. I love soups especially when it gets chilly outside and it’s just so nice to be able to open a can and heat it up.
Garnish it with homemade croutons to make the soup taste even more delicious and filling.
