This French Onion Pasta Bake is the perfect combination of french onion soup and pasta. Perfectly caramelized onions are cooked with dry red wine, mushrooms, That’s Tasty Living Organic Thyme, creamy sauce, and topped with cheese. Pasta nights are my absolute favorite. What’s better than a bowl of creamy pasta? I can’t think of much! French onion soup pasta is incredibly flavorful, easy to make, and it makes your house smell amazing. Best part? All you need is a handful of ingredients and one pot.
This one-pot french onion pasta is such a great pasta recipe to make over the holidays. I love to brighten up my dishes by using fresh herbs, and I always reach for That’s Tasty Living Organic Herbs straight from the plant! For this recipe, I used That’s Tasty Living Organic Thyme that adds an amazingly fresh and earthy flavor. Pick up a plant, clip a few stems, peel off the leaves by running your fingers along the stem and add it to the pot. Suddenly your holiday dishes taste fresher and brighter than ever!

FRENCH ONION PASTA BAKE INGREDIENTS
Avocado oil + butter, or use just avocado oil
Yellow onions
Balsamic vinegar
Dry red wine
Broth. Vegetable, beef, or chicken. They all work great.
Baby Bella mushrooms
Garlic
That’s Tasty Living Organic Thyme
Heavy cream or full-fat coconut milk
Pasta of choice. I used ziti.
Cheese, I used a combination of gruyere and parmesan
HOW TO MAKE CARAMELIZED ONION PASTA
Add oil and butter to a large pot. Add onion and a generous pinch of salt. Cook on medium-high heat until softened, about 8 minutes, stirring frequently.
Pour in balsamic vinegar and 1/2 cup wine, a splash at a time. Keep cooking and stirring until onions are caramelized around 10-12 minutes.
Add garlic, mushrooms, That’s Tasty Living Organic Thyme and cook for a couple of minutes. Pour in broth, cream. Add a generous pinch of salt and pepper and pasta. Bring to a boil. Then, add pasta, cover, and cook until pasta is al-dente about 8-10 minutes, frequently stirring to make sure pasta cooks evenly.
If using a dutch oven, sprinkle cheese on top and bake at 350F for 10 minutes or transfer pasta to a baking dish. Garnish with fresh thyme.
RECIPE NOTES
A Dutch oven works great for this recipe because you can place it in the oven later. Otherwise, transfer pasta to a baking dish.
Wine adds so much flavor to this dish, but if you don’t want to use it, substitute with 3 tbsp balsamic vinegar + broth to make ¾ cup.
If you want to keep this dish dairy-free, use avocado oil instead of butter, full-fat coconut milk instead of cream and skip the cheese.

8 oz baby bella mushrooms, sliced

12 oz pasta of choice
