Instant yeast
Salt
HOW TO MAKE SIMPLE ARTISAN BREAD
1. In a large bowl, whisk the flour, yeast, and salt together. Pour in the water and mix together with a wooden spoon. Cover tight with a plastic wrap and set on a countertop and let it rise at room temperature for minimum of 3 hours.
For even better flavor, let it rest for 8-24 hours. I love let it rest overnight and have a fresh loaf in the morning!
Once the dough has risen, knead bread for a couple of minutes on a floured work surface and form into a ball. Place into a generously floured bowl or proofing basket if you have one. Cover with a kitchen towel and let it rest for 30-45 minutes.
Meanwhile, set one rack in the middle position and the second in the lowest position of the oven. Preheat the oven to 450F and place a dutch oven or a cast iron skillet in the oven on the middle rack, and a shallow metal baking pan on the lowest rack.
After the dough has rested and it’s ready to bake, pull out the preheated skillet from the oven and place in the dough. Slide it in the oven, at the same time adding 2-3 cups of ice to the metal pan at the bottom rack.
This step is optional but I highly recommend it. The steam from ice cubes hitting the hot surface will create a crispier bread crust. Bake until golden brown and let it cool completely before slicing.
And there you have it. A loaf of homemade simple artisan bread that everyone will love!
