Do you ever get bored of waffles? Well, me either. Soft, light and fluffy with a gentle crunch on the edges. These Buckwheat Banana Waffles call for oat and buckwheat flour and other basic ingredients you can probably find in your kitchen. Buckwheat flour brings wonderfully nutty flavor, hearty texture and make them naturally gluten-free. Almond butter deepens the genuine nutty and sweet flavor. I haven’t tested it with any other nut butter, however you can easily experiment by swapping almond butter with peanut or cashew butter.
What’s more, these waffles are really easy to make. All you need to do is to combine all the ingredients, pour it onto preheated Waffle Maker, give it a couple minutes and done! Consequently, the result is healthy, moist and fluffy waffle perfection. The preparation is so much easier than pancakes, as you don’t have to worry about flipping it or burning! Also, if you happen to have leftovers, you can easily refrigerate it and then pop it in the toaster or waffle maker next morning. They will taste fresh and crispy! Beside the fact that these waffles are extremely delicious, they also will fill you up with fiber, protein and healthy fats.

Ingredients
- 3/4 cup buckwheat flour
- 1/4 cup oatmeal flour
- 2 small ripe bananas
- 1 large egg
- 2 tbsp heaping almond butter
- 2 tbsp coconut oil, melted
- 1/2 cup +2 tbsp water or almond milk
- 3/4 tsp baking soda
- 1/2 tsp apple cider vinegar
- pinch of salt
- banana
- berries
- coconut flakes
- almond butter
Instructions
- In a bowl, stir banana, egg, almond butter, coconut oil and milk.
- Combine with flours, salt, baking soda and apple cider vinegar.
- Let it rest for 5-10 minutes. Preheat your waffle maker.
- When the waffle iron is hot, grease it with a little coconut oil and then using a 1/4 cup scoop the batter and drop it onto the center of the iron. Cook until the waffles are golden brown and cooked through.
- Top with banana, berries, coconut flakes and almond butter.
