This is a staple recipe for my favorite banana oatmeal pancakes ever. They’re soft, fluffy and topped with maple glazed juicy peaches with a hint of vanilla. Such an amazing way to take an advantage of this peach season!
First, let’s start with the pancakes. I’ve made many different pancakes variations and I can honestly say these are my favorite. Not only they’re fluffy and delicious but also super easy to whip up!
HOW TO MAKE THE BEST BANANA OATMEAL PANCAKES:
To make these banana oatmeal pancakes you will need just one flour – oatmeal flour. You can simply make it at home or purchase it. To make it, place oatmeal in a blender or food processor and pulse until fine flour forms. I always like to make more and keep it in a big glass jar.
Unlike most traditional pancake recipes you won’t need any oil to make these. Instead, use a tablespoon of nut butter and mashed bananas. Make sure bananas are overripe. The bananas not only add sweetness and flavor but also moisture!
To start, mix together all the wet ingredients and fold in dry ingredients. Be careful not to overmix! Cook pancakes on a slightly greased preheated pan until the edges look dry and bubbles begin to form on the center or sides. I like to use 1/4 or 1/3 cup to drop the pancake batter. Depending if you prefer smaller or bigger pancakes!
Maple glazed peaches are such a wonderful topping for these oat pancakes. They’re juicy, sweet and add so much flavor! And guess what? There’s no roasting or grilling required!
HOW TO MAKE EASY MAPLE GLAZED PEACHES:
You can use any skillet to make caramelized peaches. I personally love the cast iron as it adds a depth of flavor and beautiful color but any skillet will work!
Melt the butter or coconut oil on a pan, and stir in maple syrup and vanilla. Add peaches and cook until beautifully golden brown. Use the “pan sauces” to pour over the peaches when cooking. Serve over the pancakes by itself or with coconut whipped cream!
Is there a better combo than peaches and cream? These pancakes are amazing with addition of coconut whipped cream.
