There seriously might not be anything better than making your own hummus using all fresh ingredients. This colorful Beet Hummus is made with chickpeas, red beet, tahini, linseed oil, lemon, and garlic. The beet hummus tastes just as delicious as regular hummus. However, the addition of a beet puree deepens an amazing gentle taste and flavor. Besides its flavor and beautiful, vibrant color, beets contain variety of important nutrients for your body! They are packed with essential vitamins that help to strengthen your immune system. Rich in antioxidants they help to prevent cancer and reduce inflammation. What’s more, being a great source of fiber they help improve a digestive health. You can eat this hummus with anything you like! My favorite is to dip veggies, crackers or spread it over this delicious Seed Flat Bread or a toast.

Ingredients
- 1/2 cup flax seeds
- 1/4 cup sunflower seeds
- 1/4 cup oat bran
- 1/4 cup blended oatmeal
- 1/4 cup chia seeds
- 1 tablespoon nigella
- 1 tablespoon sesame seeds
- 1/2 teaspoon garlic
- 1/2 teaspoon chili flakes
- 1 tsp thyme
- 1/2 tsp himalyan salt
- 1 1/4 cups water
- 1/2 cup cooked chickpeas
- 1 small, cooked beet
- 2 tablespoons tahini
- 2-3 tbsp lemon juice
- 1 tbsp oil (I used linseed oil but sunflower or olive oil will work too)
- 1 garlic clove
- 1/2 tsp himalayan salt, more to taste
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tbsp water (you can add more to adjust consistency)
Instructions
- In a large bowl combine all seeds, spices, salt and water. Stir to combine
- Set aside for around 30 minutes to absorb liquid. Mixture will thicken up.
- Line a baking sheet with parchment paper, spread out mixture on parchment.
- Bake in 360 F/ 180 C for around 30-40 minutes.
- Turn oven off and let it cool off in the oven.
- In a food processor, combine chickpeas, cooked beet, tahini, lemon juice, oil and garlic.
- Process until smooth, adding water. Add more if the texture is too thick.
- Season the mixture with salt, cumin, cayenne and extra lemon juice if you like.
- To serve, put hummus in a bowl or spread it over the seed flat bread.
