These meatless Veggie Black Bean Quinoa Burgers made me reconsider my meat eating. They look, taste and smell just like regular burgers. Even my meat lover boyfriend thought they are made with turkey! So make sure you give it a try even if you can’t imagine eating a burger without meat in it. They are low in fat, packed with good amounts of protein, fiber from quinoa, and black beans. That makes them a great alternative for regular burgers. These veggie patties are perfect if you are vegetarian or just want to cut out your meat consumption. Instead of regular buns, I used my favorite toasted sprouted whole grain Ezekiel. Topped off with avocado dip, lettuce, tomato, caramelized onions, mushrooms and carrots.
Ingredients
- 1 1/2 cup cooked black beans
- 1 cup cooked quinoa
- 4 tbsp ground flax seeds
- 1/3 cup chopped onion
- large egg
- 2 tsp minced garlic
- 2 tsp cumin
- 2 tsp chili powder
- salt, pepper
- sprouted whole grain Ezekiel bread
- toppings:
- 1 small chopped onion, sauteed with 1 tsp of ghee butter
- a few sliced, cooked mushrooms
- carrot ribbons ( I used veggie peeler)
- lettuce
Instructions
- Preheat an oven to 375 degrees F (190 degrees C).
- In a bowl, mash black beans with fork or a potato masher.
- Combine with quinoa, flax seeds, onion, egg and spices.
- Mix well until the mixture is sticky and holds together.
- Form it into patties (I made 5).
- Bake about 10-12 mintues on each side.
- Toast slices of bread and cut in half.
- Spread avocado dip on one side, top with veggies, black bean patty and another half of bread.
