This rustic Blueberry Ricotta Galette is packed with sweet and juicy blueberries, lemon and Galbani® Double Cream Ricotta. It will be your new favorite dessert to make all year long! WHAT IS A GALETTE?
Galette is a round pastry wrapped with a variety of sweet or savory fillings. Galette opposed to a pie is baked on a baking sheet. I love making galettes because they require so much less work than a typical pie. You can make them round, square or whatever shape you like. You also don’t need to worry about making it look perfect. The more messy, the better. That’s what gives it that beautiful rustic look.
BLUEBERRY LEMON RICOTTA GALETTE
This galette is made with a creamy ricotta base, bursting with juicy blueberries tossed filled with citrusy flavor. It’s such a great dessert for upcoming Easter!
INGREDIENTS YOU NEED TO MAKE THIS BLUEBERRY GALETTE WITH RICOTTA
Galbani® Double Cream Ricotta
Fresh blueberries – if using frozen blueberries, don’t thaw before
Lemon juice and zest
Tapioca flour – or any type of starch
Sugar – I used coconut sugar for this recipe
WHAT IS RICOTTA CHEESE?
Ricotta is smooth and creamy but slightly grainy cheese made from milk. It’s slightly sweet in taste and works great in sweet as well as savory recipes. Possibilities are endless! Galbani ricotta is made with just 4 simple ingredients such as milk, cream, vinegar and salt! Which makes it such a great choice over other ricotta cheeses that are usually packed with additives. I used ricotta as the base of this blueberry galette which added slightly tangy flavor and cheesecake like texture.
HOMEMADE GALETTE CRUST
Galette crust is very easy to make and I would recommend trying it out yourself rather than getting a store-bought crust! This blueberry galette is made with only 4 simple ingredients.
Whole wheat flour
Extra virgin olive oil
Iced cold water
Sugar – I used coconut sugar for this recipe
The whole wheat flour not only brings nutty flavor to it but also adds a beautiful warm color. An addition of olive oil makes the crust crunchy and very flavorful.

GALETTE CRUST
1 1/4 cup whole wheat flour
1/4 cup extra virgin olive oil
1/4 cup ice cold water
2 tbsp coconut sugar
3 tbsp milk for washing
BLUEBERRY RICOTTA FILLING
1/2 cup Galbani® Double Cream Ricotta
1 pint blueberries
1 tbsp lemon juice
zest of one medium lemon
2 tbs tapioca flour
3 tbsp raw or coconut sugar
Instructions
- In a mixing bowl, combine flour, oil, salt and 1/4 cup water. Stir to combine. Add more water or flour if needed.
- Transfer the dough to a lightly floured surface and form into a ball. Wrap in plastic wrap and place in the refrigerator for around 40 minutes.
- Meanwhile, in a medium bowl, toss blueberries, lemon juice, lemon zest, flour and sugar.
- Preheat the oven to 375 F. Roll out your dough into a 13-inch round on a lightly floured surface. Then transfer the dough on a parchment paper-lined baking sheet. Spread the ricotta in the center of the dough, leaving a 1 1/2 to 2-inch border all around. Add the blueberry mixture, gently pressing down. Fold over the pastry border, brush with milk and sprinkle with a little coconut sugar.
- Bake the galette until the crust is fully cooked and golden brown, about 35 minutes. Remove from the oven and let it cool slightly before slicing.
