If you are a lover of banana breads and brownies, you will definitely love this moist Chocolate Zucchini Bread. This recipe is made with buckwheat and oatmeal flour what makes it gluten free. Ripe bananas add just enough amount of sweetness to it. However, you can always add some extra natural sweetener like honey or maple syrup. You won’t be able to guess what the main ingredient of this delicious loaf is, being that the zucchini doesn’t really have any flavor or color. I added some dark chocolate chunks to give it a little more of a chocolaty taste and nuts for an extra crunch. I hope you’ll enjoy this recipe!
Chocolate Zucchini Bread (Gluten Free)
INGREDIENTS
3/4 cup buckwheat flour
3/4 cup oatmeal flour
1 1/4 cup drained shredded zucchini
2 very ripe bananas
2 eggs
1/4 cup cocoa powder
1/4 cup melted coconut oil
1 teaspoon cinnamon
1 teaspoon soda
1/2 teaspoon baking powder
1/2 cup nuts
1/3 cup dark chocolate chunks
METHOD
- Preheat oven to 360° F/180° C.
- Beat eggs, mashed bananas and melted coconut oil
- Mix flour, cocoa powder, cinnamon, soda and baking powder
- Add dry ingredients to the egg mixture and stir until combined.
- Stir the zucchini into the mixture along with the nuts and chocolate until well combined. Pour batter into prepared pan.
- Bake for 40 to 60 minutes until toothpick comes out clean.
