Description
This French Onion Pasta Bake is the perfect combination of french onion soup and pasta. Perfectly caramelized onions are cooked with dry red wine, mushrooms, That’s Tasty Living Organic Thyme, creamy sauce, and topped with cheese.
Ingredients
2 tbsp avocado oil
2 tbsp butter
1 pound onions, thinly sliced
1 tbsp balsamic vinegar
3/4 cup dry red wine, divided
2 garlic cloves, minced
8 oz baby bella mushrooms, sliced
2 tbsp That’s Tasty Living Organic Thyme, chopped
3 cups vegetable broth
1/4 cup heavy cream or full-fat coconut milk
12 oz pasta of choice
salt, black pepper
1 cup cheese, I used a combination of gruyere and parmesan
Instructions
- Add oil and butter to a large pot. Dutch oven works great here as you can place it in the oven later. Add onion and generous pinch of salt. Cook on medium high heat until softened, about 8 minutes, stirring frequently.
- Add balsamic vinegar and 1/2 cup wine, a splash at a time. Keep cooking and stirring until onions are caramelized, around 10-12 minutes.
- Add garlic, mushrooms, thyme and cook for a couple of minutes. Pour in broth, cream. Add a generous pinch pf salt and pepper and pasta. Bring to a boil. Then, add pasta, cover and cook until pasta is al-dente about 8-10 minutes, stirring frequently to make sure pasta cooks evenly.
- If using dutch oven, sprinkle cheese on top and bake at 350F for 10 minutes or transfer pasta to a baking dish. Garnish with fresh thyme.
