Comforting, easy to make, ready under 20 minutes sweet and creamyVegan Sweet Potato Pasta. This pasta dish is the perfect use for leftover mashed sweet potatoes!
Aren’t sweet potatoes everybody’s favorite? Beside being delicious sweet potatoes are considered as one of the healthiest foods on the planet! They’re great source of fibre as well as A and C vitamins which also function as antioxidants. These are essential for supporting immune system, healthy skin and good vision.
What you may probably not know sweet potatoes make an amazing pasta sauce which requires only 5 ingredients (including salt &pepper):
mashed sweet potatoes
sauted onion and garlic along with rosemary (optional)
veggie broth
nutritional yeast
salt and pepper
Simply combine all the ingredients in a high speed blender and blend until smooth and creamy. Heat up on the stove and stir in your pasta of choice. I usually choose high in protein, gluten-free pasta. This chickpea pasta is my personal favorite! As easy as that!

Ingredients
3 servings of pasta (gluten-free or pasta of choice)
1 cup leftover mashed sweet potatoes (about 1 medium)
1 tsp avocado oil
1/2 cup onion, chopped
2 garlic cloves
1 cup vegetable broth
1/4 cup nutritional yeast plus more to taste if desired
fresh rosemary (optional)
1 tsp salt or to taste
black pepper
Instructions
- Cook pasta according to the directions on the package. Set aside.
- In a small pan, heat up avocado oil. Add onion and sautee until tender. Add garlic and rosemary (optional) and cook one more minute.
- In a blender, combine mashed sweet potatoes, cooked onion and garlic, veggie broth, nutritional yeast, salt and pepper.
- Blend on high until smooth and creamy (about 2 minutes).
- Pour the sauce into a pan. Heat over medium heat and stir constantly for 2-3 minutes until hot. Stir in pasta and toss to coat.
- Remove from the heat. Taste and add more salt and pepper if desired. Sprinkle with extra nutritional yeast.
- Serve immediately.
