These Baked Eggplant Fries are breaded with gluten-free flour and breadcrumbs. They’re baked in the oven to a perfection until golden brown and crispy. The fries are served with marinara sauce and they’re such a delicious way to eat eggplant!
These fries made out of eggplant also called aubergine in European countries are the perfect way to try eggplant if you haven’t yet. They’re made healthier, not fried but baked in the oven. Crispy on the outside and tender on the inside! These baked eggplant sticks will be your family favorite!
BAKED EGGPLANT FRIES INGREDIENTS
Eggplant – medium size, about 1 pound
Eggs
Tapioca or flour of choice
Breadcrumbs – I used gf breadcrumbs but feel free to use regular
Spices – garlic powder, onion powder, oregano
HOW TO MAKE CRISPY EGGPLANT FRIES
Preheat the oven. First line the baking sheet with parchment paper and lightly cover with avocado oil.
Prepare your breading station. Beat eggs in one bowl, add flour to second, bread crumbs along with garlic, onion, oregano, salt and pinch of black pepper to third bowl.
Cut eggplant into fries. Cut eggplant into about 1 inch rounds and then cut into fries.
Coat the fries. Dredge eggplant fries in flour, then eggs and breadcrumb mixture. Place on a prepared baking sheet. Repeat with remaining fries.
Bake for 10 minutes, flip and bake for additional 5-10 minutes until golden brown and crispy. Garnish with fresh herbs if desired and serve with marinara sauce.

3/4 – 1 cup breadcrumbs – gf or regular
1 tsp garlic powder
1/2 tsp onion powder
1 tsp oregano
1/2 tsp salt
