Perfectly chewy, soft, not too sweet and delicious Dark Chocolate Banana Bread Cookie Skillet baked in a cast-iron skillet. Packed with dark chocolate chunks and organic cocoa & hazelnut spread, sprinkled with pink himalayan salt. It requires just a few ingredients, one bowl and 20 minutes to bake. It makes me not want to make individual drop cookies ever again!

The biggest perk of a cookie skillet is that you can just dig in with your spoon and enjoy this perfect texture. Gooey in the inside and crispy on the edges. So amazing!
This banana bread cookie skillet is made with almond flour, almond butter, ripe bananas and sweetened with only one tablespoon of maple syrup. If you prefer your desserts sweeter, go ahead and add more sweetener. To keep this recipe 100% Paleo you will need to skip on a cocoa & hazelnut spread because it contains sugar. You can substitute it with any spread you prefer or just not use any! Make sure to sprinkle your cookie skillet with some pink himalayan salt or sea salt to enhance the taste!
Ingredients
- 1 cup almond flour
- 2 very ripe bananas, mashed
- 2 tbsp almond butter
- 4 tbsp coconut oil, melted (room temperature)
- 1 egg
- 1 tbsp maple syrup
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1/4 cup dark chocolate chunks
- 2 heaping tbsp nocciolata (for non-paleo) or any spread you like.
Instructions
- Preheat oven to 350 F and grease an iron pan with coconut oil.
- In a bowl or standing mixer, combine almond or peanut butter, coconut oil, egg, maple syrup.
- Add almond flour, baking soda and apple cider vinegar.
- Fold in dark chocolate chunks.
- Pour in the batter in prepared iron pan.
- Drop large spoonfuls of nocciolata on top of batter and swirl gently.
- Bake for 20-25 minutes.
