Even though I enjoy spending time and experimenting in the kitchen, I often opt for quick dinners, that can be made in the same pan. This Easy Pan-Seared Cod Pasta is one of them! Plus the beautiful and vibrant colors require almost no effort to make this dish look good!
First, start off with cooking the pasta. You can pick any kind you like! I choose GF chickpea pasta to add extra protein. Meanwhile, sear the cod. Heat up ghee in a pan and season the fish with salt and pepper. Cook for about 8 minutes total. Once done, remove from the pan. Add garlic cherry tomatoes and cook until soften. Add in dry white wine, lemon juice, lemon zest and cook until thickens. Place the fish back in the pan, flake using forks, mix up with cooked pasta and garnish with fresh basil.
