RICE NOODLES WITH PEANUT SAUCE
I love rice noodles for being so versatile. You can eat them pretty much everyday and not get tired of them as they can be prepared in so many ways! These rice noodles are tossed with a super easy and quick peanut sauce and plenty of green onions. The best part is that these quick and healthy peanut noodles can be made and ready in just 15 minutes. Great for busy weeknights!! You can also top them with a protein of choice such as chicken or tofu. You can get a recipe for my favorite crispy tofu here.
QUICK PEANUT BUTTER SAUCE FOR NOODLES
PBfit peanut butter powder – I absolutely love using this peanut butter powder in my recipes. PBfit is made from roasted, powdered and raw peanuts, it has real peanut flavor without the high fat, sugar or salt.
coconut aminos – great gluten-free and way lower in sodium alternative for a soy sauce. If you prefer, use soy sauce instead!
rice vinegar – can substitute with apple cider vinegar!
maple syrup – easy to substitute with agave syrup, coconut sugar or honey
minced ginger
green onions
If you like spicy peanut sauce noodles add 1-2 tablespoons sriracha sauce!

Description
These Easy Peanut Sauce Noodles are the perfect meal for busy weeknight dinners! They’re made with simple ingredients and come up together in just 15 minutes! Plus they are vegan and gluten-free.
Ingredients
8 oz rice noodles
PEANUT BUTTER SAUCE
6 tbsp Pbfit peanut butter powder
1/4 cup coconut aminos
1 tbsp rice vinegar
1 tsp maple syrup
1-2 tbsp sriracha (optional)
1 tsp ginger, minced
4 scallions, chopped (green parts only, leave some for garnish)
Instructions
Cook the noodles according to directions on the package. Rinse, drain and set aside.
In a small bowl whisk together peanut butter powder, coconut aminos, vinegar, maple syrup and ginger. Stir in the green onions.
Heat up the sauce in a pot and pour over the noodles. Stir together using kitchen tongs. Garnish with remaining green onions. Serve immediately.
