These Easy Peanut Sauce Noodles are the perfect meal for busy weeknight dinners! They’re made with simple ingredients and come up together in just 15 minutes! Plus they are vegan and gluten-free.
8 oz rice noodles
PEANUT BUTTER SAUCE
1-2 tbsp sriracha (optional)
1 tsp ginger, minced
4 scallions, chopped (green parts only, leave some for garnish)
Cook the noodles according to directions on the package. Rinse, drain and set aside.
In a small bowl whisk together peanut butter powder, coconut aminos, vinegar, maple syrup and ginger. Stir in the green onions.
Heat up the sauce in a pot and pour over the noodles. Stir together using kitchen tongs. Garnish with remaining green onions. Serve immediately.
