Eggless Whole Wheat Banana Bread made 100% whole wheat, vegan and naturally sweetened. It requires just one bowl, simple ingredients and 10 minutes to whip up! The only vegan banana bread recipe that you need in your life!
Ingredients
1 3/4 cup whole wheat flour
2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
2 ripe bananas (1 cup mashed)
1/3 cup avocado oil
1/3 cup coconut sugar
1 tsp apple cider vinegar
1 tsp pure vanilla extract
1 tsp baking soda
1/2 cup chocolate chips (sugar-free)
Instructions
Start with making flax eggs. In a small bowl, mix flaxseed meal and water. Let rest about 5 minutes to thicken. Preheat oven to 350F and lightly grease a bread pan with oil.
In a large mixing bowl, mash the bananas. Mix in flax eggs, oil, coconut sugar, apple cider vinegar and vanilla extract.
Add in flour and baking soda. Mix dry and wet ingredients together. Fold in chocolate chips.
Pour into prepared pan and bake for 50 minutes to an hour or until toothpick inserted in the middle comes out clean.
