This is my new favorite comfort dish!! If you crave some mac and cheese but want something lighter, this goat cheese mac and cheese is exactly what you need! You will absolutely love it, I promise.
The addition of goat cheese cheddar adds a ton of amazing flavor, but you can totally substitute it with any cheese you like.
TRADER JOE’S GOAT MILK CHEDDAR
If you’re lactose sensitive or you simply like the flavor of goat cheese, you need to pick up this goat milk cheddar from Trader Joe’s! After trying it for the first time, I use it for pretty much everything now! From grilled cheese sandwiches, crackers, to pasta and pizza!

If you’re vegan feel free to skip the cheese and add some nutritional yeast for a cheesy taste!
HOW TO MAKE HEALTHY GLUTEN FREE GOAT CHEESE MAC AND CHEESE
Start by cooking your pasta of choice. If you want to keep it gluten-free, this, this and this is my favorite pasta that use all the time!
Then, melt grass-fed or vegan butter on a pan and whisk in some flour. If you want to keep it mess-free, I recommend using oven safe pan, so you can cook in it on the stove and then stick in the oven! I’m absolutely loving my Staub cast iron pan and I think it should be a staple in every kitchen!! Meanwhile, you will have to prepare the crunchy topping. In a non-stick pan, melt a little butter and add gluten-free panko. I love this one and Trader Joe’s rice crumbs! Cook just until it starts to turn golden.
Next you will pour in the broth and almond milk. Cook until the mixture has thickened and add all the spices, salt, pepper and shredded cheddar goat cheese. Then fold in cooked pasta.
Add the crumb topping evenly across the top of the mac and cheese and bake uncovered for about 15 minutes! Easy, simple and delish!!

8 oz gluten-free pasta, cooked according to the directions on the package 1 1/2 tbsp grass-fed or vegan butter 1 tbsp gluten-free flour 1/2 - 3/4 cup vegetable broth 1 cup almond milk 1 tsp garlic powder 1/2 tsp onion powder 1/4 tsp smoked paprika 1/8 tsp turmeric (optional, mostly to add some color) 2 cups or more goat cheese cheddar, shredded sea salt and black pepper 1/2 cup gluten-free panko 1/2 tbsp grass-fed or vegan butter Preheat the oven to 400ºF. Cook pasta according to the directions on the package. Rinse and drain. While the pasta is cooking, in a cast iron pan, melt the butter over medium heat. Whisk in the flour. Then, pour the broth and almond milk. Cook until thickened for about 5-8 minutes. Then add all the spices, salt, pepper and shredded cheddar goat cheese. Stir well. Then fold in cooked pasta. Meanwhile, prepare the topping. In a non-stick pan, melt butter and add gluten-free panko. Cook for about 2-3 minutes, stirring frequently.
