This Healthy Banana Walnut Bread is made with farro flour (or spelt flour) ripe bananas, extra virgin olive oil and naturally sweetened with honey. To make the bread a little fancier I topped it with a dairy-free cashew frosting. Perfect to enjoy with a cup of coffee, for breakfast or on the go as a snack!
Do you happen to see overripe bananas on your kitchen counter and immediately know that you’re going to make banana bread? That’s me all the time. I’ve had a little break from baking since the heat here in Atlanta has been crazy and turning on the oven would definitely not help. But I’m slowly getting back at it!!
FARRO FLOUR BANANA BREAD
I used farro flour for this recipe which is not as popular yet but I love it. It’s low in gluten and slightly sweet in taste. If you don’t have farro flour on hand, you can easily substitute it with spelt flour which is similar in baking. All purpose, whole grain or gluten-free flour can be also used in this recipe!
TIPS HOW TO MAKE HEALTHY BANANA WALNUT BREAD RECIPE
I used farro flour to make this healthy banana walnut bread. However it can be substiuted 1:1 with spelt, all purpose, whole grain or gluten free flour.
Make sure your bananas are very overripe!
Remember not to overmix the batter to keep this bread light and soft. Overmixing makes the bread dense in texture.
Add chopped walnuts for an extra nutty taste and crunch!

HOW TO MAKE DAIRY-FREE CASHEW FROSTING
To make the frosting you will need just a few ingredients:
Cashews
Full fat coconut milk
Maple syrup
Pure vanilla extract
First, soak cashews in a hot water for 45 minutes or overnight in cold water. Then drain and rinse. Place soaked cashews, hard part of coconut milk, maple syrup and vanilla into a high speed blender or food processor. Blend until smooth and creamy.

BANANA WALNUT BREAD
2 1/4 cup farro flour ( can substitute with spelt or whole wheat)
2 large eggs
3 very ripe bananas (around 1 cup mashed)
1/3 cup extra virgin olive oil
1/2 cup honey or maple syrup
2 tsp pure vanilla extract
1 tsp baking soda
1 tsp apple cider vinegar
1/2 cup walnuts, chopped + extra for garnish
CASHEW FROSTING
1 cup raw cashews, soaked for 45 minutes in hot water or 8 hours in cold water
1 can full fat coconut milk, refrigerated overnight
2 tbsp maple syrup or honey
1/8-1/4 tsp pure vanilla extract
pinch of pink salt
Instructions
- Preheat oven to 350F and lightly grease a bread pan with oil.
- In a large mixing bowl, mash the bananas. Add honey, olive oil, eggs, vanilla extract, apple cider vinegar and mix until well combined.
- Add in flour and baking soda.
- Mix dry and wet ingredients together. Add in chopped walnuts.
- Pour into prepared pan and bake for 50 minutes to an hour or until toothpick inserted in the middle comes out clean.
- Meanwhile prepare the cashew frosting. Place the thick part of coconut milk, maple syrup, vanilla and salt in a blender or food processor. Blend together until creamy.
- When the bread has fully cooled down top it off with the frosting and chopped walnuts.
