Description

This Creamy Butternut Squash Pasta is the perfect cozy meal for stay at-home date night! It’s the perfect combination of Italian and fall flavors. Al dente pasta is tossed with light and creamy dairy-free butternut squash sauce that can be made dairy free.


Ingredients

Scale

12 oz spaghetti

2 tbsp avocado oil

1 onion, quarted

3 cups butternut squash, diced

4 garlic cloves

1/2 cup heavy cream or full-fat coconut milk

1 1/2 cup reserved pasta water

pinch of nutmeg

salt & black pepper

fresh herbs and parmesan for serving (optional)


Instructions

  1. Preheat oven to 425 degree F and line a large baking sheet with parchment paper.
  2. Place onion, garlic and butternut squash on the sheet, sprinkle with salt and drizzle with avocado oil. Toss to combine. Roast for about 25-30 minutes until squash is tender.
  3. Meanwhile cook pasta according to directions on the package, reserving 1 1/2 cup pasta water.
  4. Place cooked squash, onion and garlic along with coconut milk, pasta water, nutmeg in a high speed blender and blend until smooth and creamy. Season with salt and pepper to taste.
  5. Pour the sauce into a pot to keep warm, add pasta and toss using kitchen tongs.
