HOW TO MAKE GARGANELLI PASTA FROM SCRATCH?
To make the garganelli pasta, first you need to make a simple homemade pasta dough. Get the full recipe for an easy homemade pasta dough here.
In a large bowl, stir flours and salt. Add hot water, olive oil and mix together with a wooden spoon until well combined.
Transfer to a floured working surface and knead for about 8 minutes to a smooth and elastic ball. Add more flour if the dough is too wet or more water if too dry. Use a pastry scraper or a knife to release the dough from the surface.
Cover the dough with a clean kitchen towel and let it rest for about 15-20 minutes.

HOW TO SHAPE GARGANELLI PASTA
First, divide pasta dough in half and roll out each sheet at a time using a roller. Cut the sheets into 2 inch squares, using a sharp knife or pizza cutter. Place a square on a floured gnocchi board so it lays in a diamond shape. Wrap one corner of the square around a back of a wooden spoon or a pencil and roll it, pushing it away from you until the pasta is wrapped around the back of wooden spoon/pen. Remove shaped pasta and repeat.
