Quick and Healthy Stovetop Granola

Ingredients

Scale

1 tbsp coconut oil

2 cups old fashioned oatmeal

1/4 cup maple syrup

1/2 cup almonds, chopped

1/4 cup pumpkin seeds

1/4 cup dried fruits of choice

2 tsp chia seeds

2 tbsp coconut flakes

1/2 tsp cinnamon

pinch of pink himalayan salt


Instructions

  1. On a large non-stick pan melt coconut oil on medium-low.
  2. Add in maple syrup, stirring constantly, until bubbly. Add oatmeal, almonds, seeds, coconut flakes, cinnamon and salt.
  3. Increase the heat to medium and use a wooden spoon to stir and evenly coat all the ingredients. Continue to cook until granola starts to brown 5-10 minutes. Remember to stir.
  4. Let it cool. Store in the airtight container and serve with yogurt, smoothies etc.
