My favorite type of recipes are those that require minimal ingredients, quick and easy preparation. These kimchi stir fry noodles are exactly that! Plus there’s nothing like a comforting noodles bowl for lunch or dinner!
WHAT IS KIMCHI?
Kimchi is a korean fermented cabbage made similar way as pickled and sauerkraut. Kimchi is made with a variety of different spices and ingredients such as ginger, garlic and chilies.
HOW DOES KIMCHI TASTE?
Kimchi is pretty strong in taste. It’s tangy, sour and spicy. It’s also really aromatic from all the spices. People usually love the taste or hate it! I grew up on homemade sauerkraut and pickles so I absolutely love the taste of kimchi!
IS KIMCHI GOOD FOR YOU?
Fermented foods are high in probiotics, vitamins and minerals. That may help to improve digestion, fight inflammation and boost immunity system. So yes, kimchi is really good for your healthy unless you’re allergic to some of the ingredients.
HOW TO MAKE VEGAN KIMCHI NOODLES
INGREDIENTS
Rice noodles – you can also substitute with udon noodles or regular spaghetti!
Avocado oil – or any neutral oil
Onion and green onions
Kimchi and kimchi juice
Ginger, garlic – I love this minced ginger and always have it on hand !
Coconut aminos or soy sauce – I love using coconut aminos instead of soy sauce in all my dishes! If you’ve never tried it it’s a salty, savory and a little sweet sauce made from the fermented sap of coconut palm. It’s soy, wheat and gluten-free, making it a healthier alternative to soy sauce!
Coconut sugar
1 tbsp sriracha sauce (optional)
salt, pepper
HOW TO MAKE KIMCHI STIR FRY NOODLES
Start by prepping rice noodles according to the directions on the package. Stir all the sauce ingredients in a bowl.
Meanwhile, cook onions with a dash of salt until soften. Add kimchi, ginger, garlic and cook for another couple of minutes. Pour in the sauce, stir well and turn off the heat. Season with salt and pepper. Serve immediately.

7 oz rice noodles, udon noodles or spaghetti
1 tbsp avocado oil
1 small onion, chopped
2 whole green onions, chopped
1 1/4 cup kimchi, tightly packed
2 tsp ginger, minced
1 garlic clove, minced
2 tbsp kimchi juice
3 tbsp coconut aminos or soy sauce
1 tbsp coconut sugar
1 tbsp sriracha sauce (optional)
salt, pepper
Instructions
- Cook noodles according to directions on the package. Set aside.
- Meanwhile, heat up oil on medium high heat. Add onion, white parts of green onion and a dash of salt. Cook for around 3 minutes until soften. Add green onions, kimchi, ginger, garlic and cook for another 2 minutes.
- In a small bowl stir together coconut aminos, sugar and sriracha sauce (if using). Stir well and turn off the heat. Season with salt and pepper to taste. Serve immediately.
