Description

If you’re a noodle lover you’ll absolutely love this Kimchi with Noodles Stir Fry. It’s made with just a few simple ingredients in 20 minutes from start to finish! Perfect healthy and quick weeknight dinner that’s vegan and gluten-free friendly.


Ingredients

7 oz rice noodles, udon noodles or spaghetti

1 tbsp avocado oil

1 small onion, chopped

2 whole green onions, chopped

1 1/4 cup kimchi, tightly packed

2 tsp ginger, minced

1 garlic clove, minced

2 tbsp kimchi juice

3 tbsp coconut aminos or soy sauce

1 tbsp coconut sugar

1 tbsp sriracha sauce (optional)

salt, pepper


Instructions

  1. Cook noodles according to directions on the package. Set aside.
  2. Meanwhile, heat up oil on medium high heat. Add onion, white parts of green onion and a dash of salt. Cook for around 3 minutes until soften. Add green onions, kimchi, ginger, garlic and cook for another 2 minutes.
  3. In a small bowl stir together coconut aminos, sugar and sriracha sauce (if using). Stir well and turn off the heat. Season with salt and pepper to taste. Serve immediately.
