If you’re a noodle lover you’ll absolutely love this Kimchi with Noodles Stir Fry. It’s made with just a few simple ingredients in 20 minutes from start to finish! Perfect healthy and quick weeknight dinner that’s vegan and gluten-free friendly.

7 oz rice noodles, udon noodles or spaghetti
1 tbsp avocado oil
1 small onion, chopped
2 whole green onions, chopped
1 1/4 cup kimchi, tightly packed
2 tsp ginger, minced
1 garlic clove, minced
2 tbsp kimchi juice
3 tbsp coconut aminos or soy sauce
1 tbsp coconut sugar
1 tbsp sriracha sauce (optional)
salt, pepper
Instructions
- Cook noodles according to directions on the package. Set aside.
- Meanwhile, heat up oil on medium high heat. Add onion, white parts of green onion and a dash of salt. Cook for around 3 minutes until soften. Add green onions, kimchi, ginger, garlic and cook for another 2 minutes.
- In a small bowl stir together coconut aminos, sugar and sriracha sauce (if using). Stir well and turn off the heat. Season with salt and pepper to taste. Serve immediately.
