Lemon Blueberry Banana Bread. Filled with fresh and juicy blueberries that just pop in your mouth as you bite into it! Made gluten-free and paleo friendly.
Pretty much every time I go to a grocery store I pick up at least a few bananas. And then by the end of the week I end up with a pile of ripe bananas on my kitchen counter. But guess what, they never go to waste because there’s so many ways to use them up! I freeze them for smoothies and ice cream, use them for pancakes, muffins, brownies, breads, cookies and so much more. I’ve recently started using banana peels to make an organic banana peel fertilizer and my plants love it!!! If you have plants such as tomatoes or garlic, start saving those banana peels! They are rich in phosphorus, potassium and magnesium which are so important for fast growth and healthy roots.
This lemon blueberry banana bread is such a perfect way to use up those ripe bananas. It’s simple and quick to make, gluten-free, paleo friendly, naturally sweetened and filled with summery flavors!
INGREDIENTS
almond flour
cassava or tapioca flour
ripe bananas
eggs
extra virgin olive oil – I love using this mild & fruity olive oil for baking!
lemon
coconut sugar or birch xylitol for sugar-free option
baking soda
blueberries
HOW TO MAKE GLUTEN-FREE LEMON BLUEBERRY BANANA BREAD
Start with preheating your oven to 350F. Then line a bread pan with parchment paper or grease with oil.
In a bowl, mash bananas. Add eggs, olive oil, lemon zest, lemon juice and sugar. Whisk well until combined.
In a separate bowl whisk both flours and baking soda. Add dry ingredients to wet and still just until combined.
Fold in blueberries and transfer into bread pan. Bake until toothpick inserted in the middle comes out clean.
