NO BAKE JAM THUMBPRINT COOKIES
No-bake recipes have been my favorite recently. They’re quick, easy and don’t require an oven. Thumbprint cookies have been following me for a while now and I have to admit they came out just like I expected (if not better). Unlike traditional thumbprint cookies, these are made 100% free of refined sugar, paleo friendly, gluten free and vegan. Packed with protein and healthy fats!
INGREDIENTS
nut and seed butter feel free to use any nut butter you’d like instead!
maple syrup
almond flour
pink himalyan salt
HOW TO MAKE NO BAKE THUMBPRINT COOKIES
Best part? Once the jam is ready, they take about 10 minutes to make. To make these little gems, you’ll need a food processor or powerful blender to blend all the ingredients. Then, just roll the dough in balls, flatten slightly, shape into cookies and press your thumb to create an indentation. The last step will be adding the peach jam or any kind you’d like! Make sure to keep them in a fridge since they tend to soften quickly. Also, I need to warn you that these paleo thumbprint cookies won’t last too long. They’re just too good.

Ingredients
1/3 cup nut and seed butter
3/4 cup almond flour
3 tbsp maple syrup
1/3 tsp pink himalayan salt
Instructions
- In a bowl, combine nut butter, almond flour, maple syrup and pink salt. Mix together
- Scoop around two tablespoons of batter and roll into ball. Flatten slightly and shape into a cookie. Repeat (this recipe makes around 6 cookies).
- Make a thumbprint in the center of each. Place on a lined plate and freeze for 20 minutes or more.
- Using a spoon fill each caveat with peach jam or jam of choice. Refrigerate.
