Yes, because all you need to do is place all the ingredients into a blender and blend until smooth and creamy. Once done, just stir in the chocolate! These Oatmeal Peanut Butter Banana Muffins can be ready in just 30 minutes from start to finish!
These hearty, full of protein and fiber muffins make a filling and delicious breakfast, snack or treat! You can adjust this recipe to your tastes, by adding additional sweetener like maple syrup, coconut sugar etc. I didn’t use any and it came out just perfectly sweet for my liking. Ingredients
- 1 cup oatmeal
- 1/2 cup peanut butter
- 2 very ripe bananas
- 2 eggs
- 2 tbsp sweetener (optional if you prefer it sweeter, I didn't add any)
- 3/4 tsp soda
- 1 tsp apple cider vinegar or lemon juice
- pinch of himalayan salt
- 1/3 cup chopped dark chocolate
Instructions
- Preheat oven to 350 F (180 C). Grease a muffin pan.
- Place all the ingredients except chocolate in a high speed blender and blend until smooth.
- Fold in chocolate chunks.
- Pour the batter, into each muffin cavity (approximately 3/4 of the way full.).
- Place in the oven and bake for 15-18 minutes (until toothpick inserted in the middle comes out clean).
- Let it cool.
