Today, I partnered up with Sprouts to bring you this Olive Bruschetta with Greek Whipped Feta. Both the whipped feta and olive mixture are made with Sprouts Extra Virgin Olive Oil of Greece. Olives for this oil are grown and harvested in Greece between October and December. Its smooth and balanced taste makes it ideal for adding a delicate finishing touch to various recipes. Perfect for dressing fresh salads and grilled vegetables and for making a simple pinzimonio (a mixture of olive oil, pepper, and salt).
WHIPPED FETA CHEESE
The whipped feta is so delicious and simple to make! I assure you it’s going to be your next favorite thing. You can spread it on a piece of bread, add to a sandwich, or enjoy as a dip with pita chips or cut up vegetables. It’s made traditional with a greek yogurt, extra virgin olive oil, garlic and spices. You can also add some chili flakes for a spicy kick!

Description
Olive Bruschetta with Greek Whipped Feta. Toasted sliced baguette topped with whipped feta cheese, salty olives, sweet and juicy tomatoes, herbs and extra virgin olive oil.
Ingredients
1 baguette, sliced and toasted
1 1/2 cup olives, chopped
1/2 cup tomatoes, chopped
1 1/2 tbsp Sprouts EVOO of Greece
1-2 tbsp fresh tarragon or herb of choice
WHIPPED FETA
6 oz good quality feta cheese, room temperature
1/4 cup + 1 tbsp greek yogurt
2 tbsp Sprouts Extra Virgin Olive Oil of Greece
1 garlic clove, minced
1/2 tsp oregano
sea salt, black pepper
Instructions
Combine all of the ingredients for whipped feta in a food processor or a bowl and process or mix using electric mixer until creamy. Taste and adjust seasoning, if needed.
In a bowl, mix olives, tomatoes, oil and tarragon. Set aside.
Spread whipped feta on each baguette slice and top with olive mixture. Garnish with tarragon if desired.
