Description

Olive Bruschetta with Greek Whipped Feta. Toasted sliced baguette topped with whipped feta cheese, salty olives, sweet and juicy tomatoes, herbs and extra virgin olive oil.


Ingredients

1 baguette, sliced and toasted

1 1/2 cup olives, chopped

1/2 cup tomatoes, chopped

1 1/2 tbsp Sprouts EVOO of Greece

1-2 tbsp fresh tarragon or herb of choice

WHIPPED FETA

6 oz good quality feta cheese, room temperature

1/4 cup + 1 tbsp greek yogurt

2 tbsp Sprouts Extra Virgin Olive Oil of Greece

1 garlic clove, minced

1/2 tsp oregano

sea salt, black pepper


Instructions

  1. Combine all of the ingredients for whipped feta in a food processor or a bowl and process or mix using electric mixer until creamy. Taste and adjust seasoning, if needed. 

  2. In a bowl, mix olives, tomatoes, oil and tarragon. Set aside.

  3. Spread whipped feta on each baguette slice and top with olive mixture. Garnish with tarragon if desired.
