It’s Friday, which means one thing, pizza night! This Garlic Olive Oil Pizza is made with a homemade pizza crust, topped with fragrant garlic olive oil sauce and fresh mozzarella cheese.
HOW TO MAKE PIZZA WITHOUT TOMATO SAUCE
As much as I love traditional pizza with tomato sauce, there’s something special about this olive oil white pizza. It’s easy to make, super fragrant and cheesy. Instead of the red sauce this one is made with a garlic olive oil sauce. I also like to add fresh herbs for extra fragrance.
The base of the sauce is O-LIVE & CO Organic Extra Virgin Olive Oil. They have such an amazing variety of unique flavors and I absolutely love using them in cooking and baking. O-Live olives are pressed and sealed within a few hours of harvest which makes it one of the freshest and healthiest olive oils!
NO TOMATO PIZZA SAUCE INGREDIENTS
Extra virgin olive oil. Make sure to use a good quality olive oil. I used O-LIVE & CO Organic Extra Virgin Olive Oil. They have such an amazing variety of unique flavors
Fresh herbs such as thyme, oregano or basil
Garlic cloves
Sea salt
To make it, simply whisk all the ingredients in a bowl and let it sit until ready to spread so all the flavors come together!
EASY PIZZA CRUST AT HOME INGREDIENTS
Al-purpose or pizza flour. I like to use this easy homemade pizza dough for all my pizzas. If my short on time I will pick up a pre made dough from Whole Foods!
Instant yeast – I like to use instant yeast. Unlike active dry yeast, instant yeast doesn’t have to be proofed first. It can be mixed straight into the dry ingredients with the same result!
Sweetener such as raw sugar, honey etc.
Extra virgin olive oil – it adds an amazing flavor to the dough! After stretching the dough you can also brush it lightly with olive oil. It adds even more flavor and prevents the crust from sogging
Water – use very warm, filtered water to speed up the rise time. 105-110F is the perfect temperature. Be careful not to go over 130F because that will kill the yeast.

Olive Oil Pizza without Tomato Sauce

This Garlic Olive Oil Pizza is made with a homemade pizza crust, topped with fragrant garlic olive oil sauce and fresh mozzarella cheese.
Ingredients
PIZZA DOUGH
2 1/2 cup all-purpose or pizza flour
2 1/4 tsp instant yeast
1 tbsp sweetener such as raw sugar, honey etc.
2 tbsp extra virgin olive oil
1 cup very warm water (between 105-110F)
1 tsp sea salt
SAUCE
1/3 cup extra virgin olive oil
1/4 cup chopped fresh herbs such as thyme, oregano and basil
4 garlic cloves, minced
1/2 tsp sea salt
TOPPINGS
fresh mozzarella cheese
ricotta cheese (optional)
fresh herbs for serving
Instructions
In a mixing bowl or the bowl of stand mixer with a hook attachment, mix flour, instant yeast, sugar and salt. Mix to combine.
Then, add oil and water. Mix using the dough hook on a low speed or with a spatula until dough comes together. If the dough doesn’t stick together, add more water. If it’s too wet add a little more flour.
Knead for a few minutes on a lightly floured surface or continue with the dough hook. Your dough should be smooth and elastic. Poke it with your finger as it should slowly bounce back. Shape into a ball, place in a greased bowl and lightly grease the top of the dough. Cover and let it sit in a warm place for minimum of one hour. I like to lightly heat up an oven, turn it off and place the bowl inside. The dough should double in size.
Meanwhile, prepare the pizza sauce. In a small bowl, whisk together olive oil, chopped herbs, garlic and salt. Set aside.
Preheat oven to 450 degrees F and lightly grease two 12 inch round pans.
Transfer the dough onto a lightly floured surface, knead a few times and cut in half if making two separate pizzas. Otherwise, make one large. Using lightly floured hands gently stretch each half into a disc. Place on prepared pans. Top with olive oil sauce, dollops of ricotta and fresh mozzarella. Bake for 12-14 minutes.
Notes
Use all-purpose, whole wheat or a specific pizza flour to make the dough. You can mix for example 1 1/2 cup all purpose and 1 cup pizza flour or whole wheat. 2. If using active dry yeast remember to dissolve them. First mix the yeast with warm water, sweetener and oil and let it stand to activate for about 5 minutes. Instant yeast can be mixed straight to the dry ingredients. 3. Use very warm water to speed up the rise time. 105-110F is the perfect temperature. Be careful not to go over 130F because that will kill the yeast.

Thank you so much for posting this recipe! I have recently been diagnosed with interstitial cystitis, an inflammatory bladder disorder, so all things tomato-based, acidic or spicy are off limits. I miss pizza SO MUCH, but now will be able to enjoy it again. This recipe has everything I can still safely eat without the danger of triggering a painful flareup. Can’t wait to make this!

This recipe is so amazingly easy and good that my family no longer goes to pizza restaurants, orders take out, and certainly never by frozen.
I have frozen leftovers of this pizza and reheated and it is still miles ahead of anything else.
We have it every Saturday night, but truth be told—we would be happy with it most every night.
