This fennel orange salad is ridiculously simp[e to make and it sure will impress your guests!
ORANGE FENNEL SALAD INGREDIENTS
Oranges – I chose blood oranges because they’re so unique with a hint of raspberry flavor. That’s why you can sometimes find them named as raspberry oranges. Plus their vibrant color is just beautiful!
Fennel – Make sure it’s thinly sliced. You can use this mandoline to get the perfect thin cut!
Shallot – I used red onion in this recipe but shallots are milder and sweeter in flavor and will work better here!
Avocado
Extra virgin olive oil
Sea salt flakes – I’m using this artcit thyme flakes
Fennel orange salad is made without lettuce and any dressing! All it requires is fresh ingredients and drizzle of a good extra virgin olive oil. The citrus salad is so versatile and can freshen up any dish! What I also love about it, is that it’s easily customizable and here’s a few ideas I have:
Add arugula for some greens and peppery flavor
Add feta or burrata cheese
Top it with pine nuts, pistachios or pomegranate seeds
Add fresh herbs such as mint or basil

Ingredients

2–3 medium blood oranges
1 cup fennel, thinly sliced
1 shallot, thinly sliced
1 avocado, sliced
Extra virgin olive oil
Instructions
To assemble the salad, layer sliced oranges, fennel, shallot and avocado. Drizzle with olive oil, sprinkle with sea salt and garnish with fronds.
Notes
To thinly sliced fennel you can use this mandoline.
