Brighten up your table with this Blood Orange Fennel salad. Light, refreshing and packed with so much flavor!
Ingredients

2–3 medium blood oranges
1 cup fennel, thinly sliced
1 shallot, thinly sliced
1 avocado, sliced
Extra virgin olive oil
Instructions
To assemble the salad, layer sliced oranges, fennel, shallot and avocado. Drizzle with olive oil, sprinkle with sea salt and garnish with fronds.
Notes
To thinly sliced fennel you can use this mandoline.
