Aren’t fish tacos just the best of all? These Paleo Blackened Salmon Tacos with Avocado Mango Salsa are perfect for any day of the week. Made with grain-free hard taco shells, wild-caught salmon, pickled red onions, avocado and mango salsa. They’re super simple and quick to put together! You can whip them up in less than 40 minutes!
So I made these fish tacos a few days ago and I’m obsessed. Will I be fool of my self if I tell you that these were some of the best tacos I’ve ever had! Because they really were.
I already mentioned that tacos are one of my favorite go-to dinners. Ok, let’s be honest. I have many favorite meals, but tacos are just so easy and can be made with pretty much anything you can collect from the fridge.
When making tacos I usually opt for soft organic corn tortillas or grain-free tortillas. I love hard shell tacos but I would never make them because those available at stores are packed with gmo corn, palm oil and all kinds of crap. When Siete send me these grain-free hard taco shells I was stocked. The texture, the crunchiness, everything is just perfect. Plus, the shells are fried in avocado oil! When thinking of what to put inside of these tacos I knew I will choose salmon. wild-caught salmon is my favorite kind of fish and I make it at least once a week. It’s a great source of healthy fats, protein and it just tastes amazing!
Next, pickled red onions. They’re my favorite and this was actually the first time I made them at home. Not sure why, because they’re ridiculously easy to make. I will do a detailed post soon but for now, you can scroll down for the quick recipe!
The last but not least ingredient that goes into those amazing blackened salmon tacos is the avocado mango salsa. It took the tacos to the next level and I could literally eat the salsa with a spoon. All you need to make it is avocado, mango, cilantro and lime!
HOW TO MAKE PALEO BLACKENED SALMON TACOS:
First, prepare the pickled red onion. I always like to make it ahead and store a jar in the fridge!
Blacken the salmon by rubbing all the spices into salmon fillets.
Cook salmon fillets on a preheated pan with oil until lightly charred and crisp,
Meanwhile make the avocado mango salsa.
When the fish is done, cut it up in small pieces. Assemble the tacos by adding salmon pieces, pickled red onion, avocado mango salsa and cilantro. Serve with lime wedges.
