Pesto Puff Pastry Shamrocks are the perfect, delicious and fun appetizer for a St. Patrick day or any other time! Made with only 3 ingredients in just 30 minutes!
PESTO PASTRY
This pesto appetizer is so simple and quick to make. It looks and tastes like something you’ve been working on for hours, but all it requires is 30 minutes. That’s my favorite. Shaped in shamrocks to celebrate the St. Patrick day! Watch my full tutorial how to make pesto puff pastry shamrocks here.
WHAT YOU NEED TO MAKE THESE PESTO PUFF PASTRY SHAMROCKS
Puff pastry (regular or vegan friendly)
Pesto (regular or vegan) – I absolutely love this vegan pesto that I got at my local Sprouts. It’s made with sunflower seed oil, basil, potatoes, tofu and cashews.
Egg for egg wash
VEGAN EGG WASH REPLACEMENT
If you want to keep the recipe vegan, you can use plant based milk and a tiny bit of maple syrup for browning. Aquafaba has also worked for me!
HOW TO MAKE THE PUFF PASTRY SHAMROCKS
Roll out a sheet of thawed puff pastry into a rectangle on a floured surface. Cut around 1/2-inch strip of the rolled pastry.
Spread pesto over the puff pastry sheet, fold it from both sides and brush with egg. Then roll both long sides toward the middle until they meet. Brush with the egg to “glue them together”. Cut the roll into ½-inch slices and pinch the bottom of the slices to form a heart shape (watch the video for the instruction)
Put a strip of the puff pastry along with three hearts together on a parchment-lined baking sheet to make a shamrock shape. Brush it all around with egg wash to “glue” your everything together.
4. Bake at 400 degrees for about 15 minutes or until golden in color! Sprinkle with sea salt flakes and fresh thyme.
