Super crunchy, tasty and easy to make Phyllo Wrapped Asparagus. The perfect appetizer for gatherings or a side dish! Served with a horseradish dipping sauce.
When it comes to appetizers, I’m all about food that’s easy, quick to prepare and tasty! Something that doesn’t take ton of time and clean up. That’s why I love this phyllo wrapped asparagus recipe! It requires just a few simple ingredients. To make it even easier, I used Reese’s all white asparagus spears. Best part? Reese’s asparagus spears are jarred, which means you can keep them in your pantry and have on hand when needed! White asparagus is a bit more tender and milder in flavor than green asparagus. It’s also very short lived, that’s why it’s so great you can get white asparagus in a jar!
What I also love about this recipe is that it can be assembled a day ahead, refrigerated and then baked the next day right before serving!
If you never used phyllo dough before, don’t be intimidated. This was my first time cooking with phyllo and it was easier than I thought it would be. there’s just one thing – you have to work quick with it!
HOW TO MAKE PHYLLO DOUGH WRAPPED ASPARAGUS
First, pat dry Reese’s all white asparagus spears using a paper towel.
Unroll the thawed phyllo sheet and place a few damp paper towels over the top so it doesn’t dry out.
Place 2-3 sheets on a cutting board and brush with extra virgin olive oil and sprinkle with parmesan cheese (optional).
Then, using a sharp knife, cut the sheet into 4 parts. Place asparagus spear on each piece of the phyllo dough and roll up. Don’t worry if the phyllo sheet tears, you won’t be able to tell once it’s baked!
You can either bake them right away or cover with plastic wrap and refrigerate until ready to bake! Phyllo wrapped asparagus are served with a creamy horseradish dipping sauce.
HORSERADISH DIPPING SAUCE
It’s so good. You will want to eat it with everything! Made with a good quality mayo (can substitute with a vegan mayo), subtle bite of Reese’s prepared horseradish, balanced with lemon juice and a bit of dijon mustard. It pairs perfectly with phyllo wrapped asparagus, but it’s also great with fish, veggies, meats, anything!
This recipe makes about 10 phyllo wrapped asparagus. However, feel free to double or triple the recipe!!
