This Raspberry and Almond Butter Chia Pudding is surprisingly easy to make, and nutritious. It’s packed with a super food – chia seeds, which makes it a great source of omega-3 fatty acids, and rich in antioxidants. It’s packed with almond butter, fresh fruit, and natural sweetener. All that means that this layered chia pudding is just a perfect breakfast, snack or treat!
The base is raspberry jelly, made with fresh raspberries, maple syrup and chia seeds. The creamy chia pudding layer is made with chia seeds, almond milk, almond butter, while sweetened with only dates and maple syrup.
This recipe makes a perfect quantity of 2 servings.
What I really love about this chia pudding is that you can easily prepare it ahead of time, in a mason jar or container and enjoy it at home or on the go during the week!
THIS RASPBERRY & ALMOND BUTTER CHIA PUDDING IS:

Ingredients
- 1/4 cup chia seeds
- 1 cup almond milk
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 5 dates
- pinch of himalayan salt
- 1 cup frozen or fresh raspberries
- 2 tsp maple syrup
- 1 tbsp chia seeds
Instructions
- For the pudding, combine all the ingredients in a blender and blend until mixed together.
- Let it set in the fridge for 2-3 hours or overnight.
- Meanwhile, prepare the raspberry jelly. Place raspberries on a small sauce pan, along with maple syrup.
- Warm over a medium-high heat until bubbling. Then lower heat and cook for a couple minutes, while stirring occasionally.
- Turn off the heat and stir in chia seeds. Let it cool.
- Place a few spoons of raspberry jelly on the bottom of each jar. Divide chia pudding between two jars. Top it with the rest of the raspberry mixture and fresh raspberries, blackberries and pomegranate.
