These healthy and easy Raw Collard Green Wraps dipped in a peanut sauce are the perfect light summer lunch, dinner or snack. Whether you like regular tortillas or not, you need to try these collard green wraps. Once you stuff the leaf with quinoa, and all the other vegetables, you won’t even realize you’re eating a super nutritious, low carb wrap. Each leaf only has around 15 calories, and it’s packed with vitamin K, C and A.
What’s more, you can customize your wraps however you’d like. Swap quinoa for rice, or rice noodles, or even add more raw or roasted veggies for an extra flavor. I love using collard greens instead of lettuce. They’re large sized and strong so you can packed them up like a burrito without worrying about them falling apart. Key to the perfect collards green wraps, is soaking them in sizzling water. It makes the rolling process much easier and fun. On top of that, it takes a little bitterness out of collard leaves.
It’s super easy and quick. What you need to do is, fill out a large pan with water and bring it to simmer. Meanwhile, trim away the thick part of the stem so you can easily wrap it around. Place the leaves one at a time in the simmering water for around 30 seconds until softened. Pet it dry and set aside. You can prepare a couple of bunches in advance and store them in your fridge!

Ingredients
- bunch of collard green leaves
- cooked quinoa
- sauteed mushrooms
- raw beet, shredded
- carrots, cut into matchsticks
- 1/4 cup peanut butter
- 2 tbsp coconut aminos or soy sauce
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 2-3 tbsp water
Instructions
- Fill out a large pan with water and bring it to boil. Meanwhile, trim away the thick, part of the stem so you can easily wrap it around. Place the leaves one at a time in the simmering water for around 30 seconds until softened. Pet it dry and set aside.
- Working with one leaf at a time, arrange your fillings. Fold the leaf in toward the filling and then tightly roll the filling inside the leaf.
- Repeat and cut each wrap in half.
- For the peanut sauce, simply mix all the ingredients until combined.
