Who is ready for the best ever roasted cauliflower tacos? These tacos are made with cilantro pesto, roasted to perfection cauliflower, chipotle crema and pickled red onions. Made vegan, gluten-free and ready in less than 30 minutes. You will absolutely love this recipe!
Tacos are one of my favorite things to eat and I definitely don’t share enough of them here! These easy gluten-free and vegan tacos are to die for.
The base of these tacos starts with roasted turmeric cauliflower. The cauliflower is filled with warm flavors of turmeric and cumin. Plus it turns out perfectly crispy every single time. I make this recipe all the time and eat is as a snack, side dish and serve it over rice bowls. This time I tried it in tacos and it’s my new favorite thing!
HOW TO MAKE CAULIFLOWER TACOS
The recipe is easy and it comes together really quick. While the cauliflower is roasting in the oven, prepare the pesto and chipotle cream. Also make sure to have some pickled red onions on hand! These apple cider vinegar pickled onions are my favorite one to make. I always have a jar on hand! They’re crunchy, tangy and you can use them in so many dishes.
VEGAN CHIPOTLE CREAM FOR TACOS
This vegan chipotle aioli is such an amazing condiment and it will take any dish to the next level. It’s creamy, spicy, smoky, tangy and addicting! Use it as a dip, drizzle over tacos, burgers, sandwiches and more!! These are the ingredients you need:
Cashews – use raw cashews and toast them on a pan or roasted unsalted cashews
Chipotle peppers in adobe sauce – you will need both, peppers and sauce in this recipe
Maple syrup – you can substitute with any sweetener
Coconut aminos
Lemon juice or apple cider vinegar – the acidity helps to balance out the spiciness
Nutritional yeast
Smoked paprika, garlic powder, salt – smoked paprika adds even more smokiness!
CILANTRO PESTO
If you love cilantro and pesto you will go crazy for this easy cilantro pesto! All you need is 5 ingredients and 5 minutes to make it.
Cilantro
Sunflower seeds or nuts such as cashews, walnuts or almonds
Avocado oil or evoo
Garlic
Lime

Ingredients

tortillas, warmed up
ROASTED CAULIFLOWER
1 cauliflower head (about 1 1/2 to 2 pounds)
3 tbsp avocado oil
1 tsp turmeric
1/2 tsp cumin
1/2 tsp pink salt
1/4 tsp black pepper
CILANTRO PESTO
½ cup sunflower seeds, toasted
1 cup cilantro, tightly packed
¼ cup avocado oil or evoo
2 garlic cloves
1/2 lime, juiced
lime wedges for serving
Instructions
- Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.Cut cauliflower into florets and place it in a large bowl.Add oil, turmeric, cumin, salt and pepper and toss to combine. Spread cauliflower out in an even layer so the florets aren’t touching. Roast for 25-30 minutes until golden brown, stirring once.
- Meanwhile prepare cilantro pesto and vegan chipotle aioli. For the pesto, place place all the ingredients in a food processor or high speed blender and blend until smooth. Add a little bit of filtered water if the consistency is too thick. Transfer to a bowl.
- Rinse off the blender and place all the ingredients for the chipotle crema. Blend until smooth.
- Assemble the tacos; spread pesto, add cauliflower, pickled onions and drizzle with chipotle cream. Serve with lime wedges.
