These Sweet Potato Waffles are really easy to prepare. The main thing is to quickly boil sweet potatoes and then mash it with a fork. All you need to do next is to mix all the ingredients, pour it on a preheated waffle maker!
Sweet potatoes are my favorite. Slightly sweet in flavor and packed with nutrients like Vitamin C, Vitamin A in the form of beta-carotene. I love to use them in savory dishes as well as in baking goods. I recently make these savory sweet potato waffles and they’re on another level! Perfectly crispy, flavorful and healthy! You can top them off with savory as well sweet toppings.
Top them with fresh spinach (not necessary) and let the magic happen! They make an incredible breakfast, brunch or lunch! I topped them off with sautéed broccolini, avocado and pumpkin seeds.

I recently made a new photography background to add to my little collection and I’m loving it. Food photography backdrops are pretty expensive and you can make it SO easy and cheap yourself! All you need is a plywood board, some flat paint samples, sponge, glove a little bit of creativity! It costed me $10 in total! So worth it.
Back to the waffles. These are the reasons why you need these Savory Sweet Potato Waffles:
Perfectly crispy

Ingredients
Sweet Potato Waffles:
1 cup brown rice flour
1/2 cup tapioca flour
1/2 cup mashed sweet potato
1 large egg
3 tbsp avocado oil
3/4 tsp baking soda
1 tsp apple cider vinegar or lemon
1/4 tsp pink himalayan salt
Sauteed Broccolini:
8 oz / 230g broccolini
1 tbsp avocado oil
2 slices lemon
1/2 tsp pink himalayan salt
1 tsp garlic
Toppings:
avocado
pumpkin seeds
Instructions
- If you don't have any sweet potato leftovers, cut in pieces and cook until soft. Mash with a fork.
- Place all the wet ingredients in a bowl and whisk until combined.
- Add in dry ingredients. Mix again (don't overmix it).Preheat your Waffle Maker.
- When the waffle iron is hot, grease it with a little avocado oil and then using a 1/2 cup scoop the batter and drop it onto the center of the iron. Cook until the waffles are golden brown and cooked through.
- Meanwhile prepare the broccolini, trim and wash it properly. Preheat avocado oil.
- Place lemon on a pan and sizzle for around 2-3 minutes.
- Add broccolini, salt and garlic, cover and sautee until crisp tender.
- Top waffles with avocado, broccolini and pumpkin seeds.
