These Strawberry Peach Chia Pudding Parfaits make a light and filling breakfast, snack or dessert. Made with fresh seasonal fruits, chia seeds, almond milk, and lightly sweetened with maple syrup. As easy as it gets! Dairy free, vegan and packed with all the nutrients!
Chia seeds are considered as a “superfood” – for many good reasons! Being an excellent source of omega-3 fatty acids and high in antioxidants, they help protect the body from free radicals, aging and help raise a “good” cholesterol. What’s more, these little tasteless seeds are loaded with fiber. Only two tablespoons contain one third of the daily recommended intake! Chia seeds are one of the easiest ways to add fiber to your diet, because they don’t even taste like anything!
Chia pudding doesn’t really require any recipe. One thing you need to remember is a basic ratio. One cup of milk to 1/4 cup chia seeds. Place both ingredients in a jar, shake it up and let sit in the fridge for a few hours or overnight. The seeds soften and absorb the liquid. The result is a delicious and creamy chia pudding. What I love to do is to simply mix it before bed, pop it in the fridge, and enjoy the next morning!
The fun thing about making chia pudding is that you can totally customize it yourself! Add granola, berries, favorite smoothie or whatever you like or have on hand! I layered it up with blended peaches and fresh strawberries since they’re both in season now.

Ingredients
- 1/4 cup chia seeds
- 1 cup almond milk or any milk you like
- 1 tbsp maple syrup
- 2 ripe peaches
- 1 tbsp maple syrup
- sliced peach
- strawberries
Instructions
- In a jar, combine chia seeds, milk of choice and maple syrup. Shake well and place in the fridge allowing it to thicken (from a few hours to overnight).
- Blend peaches and maple syrup together.
- When ready to serve, divide the chia pudding into two servings.
- Layer it up with a peach smoothie and top off with peach slices and strawberries.
