Summer Tortellini Pasta Salad bursting with your favorite fresh ingredients, tossed with the most simple vinaigrette will be your family favorite. Very quick and easy to make, and can be served alone or as a side dish! Perfect for potlucks, picnics and summer parties!
This tortellini pasta salad is prepared with Da Vinci Multi Color Tortellini that already has so much flavor so you don’t really need to add many ingredients.
DaVinci Multicolor Tortellini is made with 100% durum wheat semolina, filled with breadcrumbs and parmesan cheese and is naturally colored with a spinach powder. It’s so good that I could seriously eat it everyday.
HOW TO MAKE TORTELLINI PASTA SALAD
One of my favorite thing about making pasta salads? They’re so easy and quick to make! Plus this recipe is perfect for making a few days ahead and letting sit in the fridge. Honestly it tastes even better then!!
Once you cook the tortellini, immediately rinse it with cold water and drain well. Then, drizzle it with a bit of the dressing and toss to prevent the pasta from sticking. For this recipe, I made my favorite dressing using apple cider vinegar and other 5 simple ingredients It’s delicious and doesn’t overwhelm the taste of the flavorful summer veggies and cheesy tortellini!
For the tortellini pasta salad ingredients, you can use up any summer produce that you have on hand. I used a few of my favorites:
Fresh cherry tomatoes – home grown or farmers markets are the best choice! Nothing beats their flavor.
Arugula – adds a nice peppery flavor to counter the richness of the cheese filled tortellini! Spinach and baby kale works great too!
Pickled red onions – my all time favorite salad ingredient. So easy and only takes a handful of ingredients to make! I always keep a jar in my fridge. You can find the recipe here.
