You can add different vegetables and protein to end up with a unique flavor and texture each time. I love this particular Thai Shrimp Coconut Curry because of how quick and easy it is! THAI SHRIMP COCONUT CURRY INGREDIENTS
wild shrimp
honey or maple syrup
avocado oil
garlic, ginger, green onions,
chopped vegetables such as carrots, edamame, mushrooms, peas
full-fat coconut milk
red curry paste
coconut aminos or soy sauce
limes, cilantro
HOW TO MAKE COCONUT CURRY SHRIMP
Start by mixing shrimp, honey, oil, garlic, ginger and green onions. Set aside for about 5-10 minutes. Then, cook the shrimp along with all the marinade for about 2-3 minutes on each side until pink. Transfer to a bowl.
With the same pan, add remaining oil and all the vegetables. Stir fry until tender soft, about 5 minutes. Pour in coconut milk and coconut aminos, and stir in the curry paste. Bring to a simmer and then add the shrimp. Turn down the heat and cook to let the flavors and sauce soak into the shrimp, about 2-3 minutes.
Meanwhile, prepare the Minute® Ready to Serve Rice. Divide between two bowls, top with the coconut curry, and garnish with cilantro and lime wedges. And there you have it! The easiest and most delicious Thai-inspired coconut shrimp curry.
