These easy and healthy Vegan Banana Chocolate Chip Muffins are made 100% whole wheat and naturally sweetened. All you need is one bowl, ingredients that you probably already have and 10 minutes to whip up!
2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
2 ripe bananas (1 cup mashed)
Start with making flax eggs. In a small bowl, mix flaxseed meal and water. Let rest about 5 minutes to thicken. Preheat oven to 350F and grease a muffin pan or line in with muffins tins.
In a large mixing bowl, mash the bananas. Mix in flax eggs, oil, coconut sugar, apple cider vinegar and vanilla extract.
Add in flour and baking soda. Mix dry and wet ingredients together. Fold in chocolate chips.
Pour into prepared pan and bake for 25 minutes until toothpick inserted in the middle comes out clean.
