EGGLESS PROTEIN PANCAKES INGREDIENTS
Flour ( I used a gluten-free flour mix)
Orgain Organic Plant-Based Chocolate Peanut Butter Powder
Plant-based milk
Apple cider vinegar or lemon juice
Salt
HOW TO MAKE VEGAN BUTTERMILK
These pancakes are made with vegan buttermilk which makes them so light and fluffy! Vegan buttermilk is the easiest thing to make ever and it works great for vegan baking. You basically mix a plant based milk such as almond, cashew, coconut or soy with lemon juice or apple cider vinegar. Then let it sit for about 5 minutes to curdle and it’s done!
Personally, I didn’t add any additional sweetener to the batter since the protein powder is already naturally sweetened, plus you will probably end up drizzling pancakes with some maple syrup.
A FEW TIPS FOR THE BEST FLUFFY VEGAN PROTEIN PANCAKES
Pre-heat the pan over medium-high heat and brush with a coconut or avocado oil.
Mix the dry ingredients well.
Fold the batter gently until everything is well combined but don’t over overmix it. Don’t worry if there are a few clumps of flour left!
Flip once the center begins to bubble and edges are dry.
Let the batter rest for 5-10 minutes before cooking.
