Ingredients
- 2 tbsp avocado oil
- 3/4 cup chopped carrots
- 1 medium onion, chopped, around 1 1/3 cup
- 1 medium potato
- 2 tbsp tomato paste
- 3 garlic cloves
- 1 cup dry lentils, rinsed
- 32 ounces vegetable broth
- 1 cup kale, chopped
- 1.5 tsp curry powder
- 1 tsp cumin
- 1/2 tsp thyme
- 1/4 tsp chili flakes
- himalayan salt, pepper
- 1/4-1 cup water (optional)
Instructions
- Heat avocado oil in a large pot over medium-high heat. Add carrots, onions, sweet potato and saute around 2-3 minutes.
- Add in tomato paste, garlic, lentils, curry, cumin, thyme, chili flakes, salt and cook for another two minutes. Pour in vegetable broth, cover and cook until lentils are cooked through (around 30-40 minutes).
- Add kale, turn off the heat and let it stay covered for about 10 minutes. Add water if you'd like to thin the soup.
- Serve warm.
