I’m so obsessed with sweet potatoes, that I’ve been making them every other day lately. I’m already drooling while posting this recipe! They have more grams of natural sugars than regular potato, but contain more nutrients. What’s more, they are one of the greatest sources of vitamin A. These Veggie Loaded Sweet Potato Nachos are naturally gluten free, perfectly seasoned, tossed with avocado oil and topped with my favorites. In the recipe, I used black beans, roasted corn, onion and avocado dip to top my sweet potato nachos. However, feel free to add some of your favorites!
Veggie Loaded Sweet Potato Nachos (Vegan + Gluten Free)
Ingredients
- 2 medium grated sweet potatoes
- 2 tbsp avocado oil
- 1/2 can black beans
- 1/2 can corn
- half of medium onion
- 2 tsp chili powder
- 2 tsp thyme
- 1 tsp oregano
- himalayan salt, pepper
- 1 ripe avocado
- 1/4 cup greek yogurt
- 4 tbsp water
- 1 garlic clove
- juice of 1/2 lime
- salt, pepper
Avocado dip:
Instructions
- Preheat oven to 400 degrees F.
- Mix sweet potato slices with avocado oil and seasonings.
- Bake for around 25 minutes. Flip halfway through.
- Place cut onion and corn on a different baking sheet and bake for around 10-15 min.
- Prepare the dip blending all ingredients.
- Remove pans from oven and top sweet potatoes with black beans, onion, corn and avocado dip. Serve immediately.
