I’m so obsessed with sweet potatoes, that I’ve been making them every other day lately. I’m already drooling while posting this recipe! They have more grams of natural sugars than regular potato, but contain more nutrients. What’s more, they are one of the greatest sources of vitamin A. These Veggie Loaded Sweet Potato Nachos are naturally gluten free, perfectly seasoned, tossed with avocado oil and topped with my favorites. In the recipe, I used black beans, roasted corn, onion and avocado dip to top my sweet potato nachos. However, feel free to add some of your favorites!
