These Baked Spicy Chicken Taquitos are crispy on the outside and filled with spicy and creamy shredded chicken and cheese. Topped with pickled red onions and served with a creamy avocado cilantro dip.
Cinco de Mayo is right around the corner and I created this spicy chicken taquitos recipe to celebrate!
As you probably already know I love shopping at Sprouts. All their produce is truly the best! It’s fresh and priced very affordable including the avocados, onions, cilantro featured in this recipe.
WHAT’S IN A CHICKEN TAQUITO
Taquitos are pretty much rolled tacos. They’re filled with some kind of meet, cheese and then fried. These homemade chicken taquitos are baked in the oven. They’re still super crunchy but better for you! They’re a healthier version of the classic buffalo chicken taquitos.
WHAT DO YOU NEED TO MAKE THESE CREAMY CHICKEN TAQUITOS
Tortillas – corn, flour or tortillas of your choice
Shredded chicken – you can use rotisserie chicken, or make it from scratch at home. I love making shredded chicken in the instant pot. You basically place the chicken breasts, salt, pepper and cover with vegetable broth or water. Then cook under “poultry” option on high pressure for 10 minutes. Once done, take out the chicken and shred with two forks.
Greek yogurt – usually recipes for creamy taquitos call for cream cheese. But greek yogurt works great and it’s healthier!
Chili powder
Hot sauce – I used Siete traditional hot sauce that I got at Sprouts
Cheese – you can use mexican cheese or shredded mozzarella
I love serving taquitos with these apple cider pickled red onions!
HOW TO MAKE CHICKEN TAQUITOS
Start with placing shredded chicken along with greek yogurt, hot sauce and chili powder in a bowl. Mix until combined. Season with salt and pepper if needed.
Warm up the tortillas wrapped in a damp paper towel in a microwave for 40 seconds.
Assemble the tortillas. Place around 1-2 tbsp of the chicken mixture in a row, closer to the edge (about 1 inch) of each tortilla and some cheese. Roll up tightly. Place seam side down on the prepared baking sheet. Spray or brush the taquitos with avocado oil Bake for 8-10 minutes then flip and bake for additional 5 minutes.
ARE TAQUITOS HEALTHY?
It all depends what ingredients are used and the way taquitos are cooked. I consider these spicy chicken taquitos healthier, because they’re made with organic gluten-free tortillas, organic chicken breasts, greek yogurt and baked in the oven instead of frying. They’re delicious! These spicy chicken taquitos will be your family favorite!

CHICKEN TAQUITOS
8 gluten-free tortillas
2 cups shredded chicken
½ cup greek yogurt
3–4 tbsp hot sauce
1 tsp chili powder
AVOCADO CILANTRO DIPPING SAUCE
1 ripe avocado
½ cup cilantro
1 lime, squuezed
1 garlic clove
salt, pepper
Instructions
- Preheat oven to 425 F and line baking sheet with parchment paper. Place shredded chicken along with greek yogurt, hot sauce and chili powder in a bowl. Mix until combined. Season with salt and pepper if needed.
- Warm up the tortillas wrapped in a damp paper towel (2 at a time) in a microwave for 40 seconds.
- Assemble the tortillas. Place around 1-2 tbsp of the chicken mixture in a row, closer to the edge (about 1 inch) of each tortilla and some cheese. Roll up tightly. Place seam side down on the prepared baking sheet. Spray or brush the taquitos with avocado oil Bake for 8-10 minutes then flip and bake for additional 5 minutes.
- To make the avocado cilantro sauce, place all the ingredients in the high speed blender or food processor and blend until creamy. Serve with taquitos. Garnish with pickled onions.
