Pizza nights are definitely my favorite kind of nights! Nothing really compares to a homemade pizza made just the way you like it. This white mushroom pizza is made without tomato sauce and it’s the perfect summer pizza recipe since it’s made entirely on the grill! Of course you can make it in the kitchen as well.
MUSHROOM ONION WHITE PIZZA
This pizza is made with such simple ingredients and filled with so much flavor at the same time. The star ingredients of this pizza are grilled portobello mushrooms and vidalia onions. Sweet Vidalia Onions are less pungent, with aromatic notes and a sweet, mild flavor. They are perfect for grilling and frying. I picked the sweet vidalia onions at my local Sprouts. Shopping for produce at Sprouts is my favorite because everything is always fresh and affordable!

HOW TO MAKE MUSHROOM ONION PIZZA ON THE GRILL
Grill onions: Preheat grill to 450 degrees F. Peel the onion and cut into 3/4-1 inch thick slices. Brush the onion slices with olive oil on both sides. Place directly on the grill and cook for 5-7 minutes per side. Flip once the rings have grill marks. If the onions are sticking, they aren’t ready to be flipped yet.
Grill mushrooms: Meanwhile place mushrooms in center of foil and season with salt and pepper. Double fold top and end sides of the foil and seal tightly. Place on the grill and cook for around 15 minutes, flipping halfway through until mushrooms are tender.
Prepare the crust or use pre-made one: Meanwhile, transfer the dough onto a lightly floured surface. Gently stretch into 12-13 inch circle.
Cook on the grill: Place the pizza dough directly on the clean grill grates, close the lid and cook for 2-3 minutes until golden brown on the bottom. Take out the pizza crust, brush with olive oil and sprinkle with fresh basil. Top with half of the cheese, mushrooms, onions and remaining cheese. Place back on the grill, close the lid and cook 3-5 minutes until cheese is melted.
Bake in the oven: Place pizza crust on a large pan. Brush with olive oil and sprinkle with fresh basil. Top with half of the cheese, mushrooms, onions and remaining cheese. Bake at 450 F for 13-15 minutes until cheese is melted and the bottom is golden brown.
