PICKLED RED ONIONS INGREDIENTS
Red onion, large
Apple cider vinegar
Water
Honey, maple syrup or coconut sugar
Salt
Peppercorns (optional)
HOW TO MAKE PICKLED RED ONIONS QUICK WAY
First, slice he onions thinly. That will help to absorb more of the vinegar mixture and soften faster. Pack them tightly into a mason jar. These are my favorite jars for pickled onions and other pickled food.
In a small saucepan combine vinegar, water, sweetener, salt and peppercorns if using. Bring to a simmer.
Pour the mixture over the onions and push down the onions with a spoon to completely cover them.
Let the onions cool for 25-30 minutes. Serve or refrigerate for up to 3 weeks.
ARE PICKLED ONIONS GOOD FOR YOU?
Yes, red onions are packed with vitamins and minerals, such as folate, vitamins C, B6 and more. The onions are pickled in apple cider vinegar which is high in antioxidants. Also, fermented vegetables such as pickled onions contain high amounts of good probiotics that help to maintain healthy gut!
