1 Anaheim or jalapeno chile pepper
3 avocados, ripe
¼ cup red onion, diced
1 roma tomato, diced
¼ cup cilantro, chopped
juice of 1 lime or to taste
1/2 tsp salt or to taste
Instructions
- Cut Anaheim pepper in half and remove all the seeds. Broil for about 5 minutes until charred. Wrap in a foil and let it stand for a few minutes. Then peel off the skin and dice it. Let it cool.
- Meanwhile, mash the avocados. Add onion, tomato, cilantro, lime juice, salt and cooled Anaheim pepper. Serve with tortilla chips.
